
The Hamptons’ Bagel Mafia (unnamed) doesn’t want you to know that you can get the BEST bagels in the Hamptons at the new Pop-Up Bagels on Springs Fireplace Road. But don’t be pressured by the big guys—you NEED these bagels in your life. Here’s how to cop the best bagels in the Hamptons.
This is East End entrepreneurship at its best. There is a spray-painted sign in front of the pop-up that should be a good signal: they put their money into the bagels, not into the branding. Past the sign, there is a small vendor table with a friendly server who checks that your order is ready.
Starting every Sunday at 12 pm, you can schedule your pickup of the week’s bagels and specialty schmear and butter. Food is prepared and sold on-site at The Cookery (83 Springs Fireplace Road, East Hampton). Access to the kitchen means that you know the food is freshly and safely prepared, all without waiting or even having to leave your car.
I’m going to keep this short because there isn’t much that needs to be said about these bagels besides how good they are. Instead, just follow the instructions below to get your bagels locked in for this weekend!

- Choose Specialty Schmears (Scallion, Plain, Everything Herb, Chimichurri)

The bagels come in a complementary tote bag that reads: “Not Famous, but Known,” which might be the best tote bag branding I’ve ever seen!
Definitely a family operation, I’m almost positive I heard the baker say, “Mom, is the order ready?” These are all good signs that what you’re about to eat—and smell—comes from the heart. You know how some places have those annoying signs that say “free smells”? Well, I would happily pay just to sit in a car with a fresh bag of Pop-Up Bagels. Malty, warm, doughy – you know the smell.
Each bagel has its own handmade character, but generally, the bagels are smaller than usual but also plumper. How do they make them so soft while still having that essential “pull” when you tear a bite off??
