The notable omakase brand Sushi by Boū is opening in the Hamptons for the summer 2025 season.  The exclusive omakase speakeasy concept will be tucked away inside Sydney’s “Taylor” Made Cuisine in Westhampton Beach.  Sushi by Boū, the flagship brand of the NYC-based hospitality group Simplevenue, will launch its unique dining experience on May 23rd. The Hamptons opening brings the Sushi by Boū portfolio to 25 locations nationwide.

Staying true to the brand’s signature approach—transforming intimate spaces into luxurious, high-energy culinary escapes—Sushi by Boū brings its latest experience to life through a hidden entrance inside Sydney’s, where guests will answer a riddle before ascending to an intimate, beach-themed sushi counter where a private chef awaits.
In just 75 minutes, diners embark on a 12-course edomae-style omakase journey, artfully curated and prepared before their eyes. Omakase, meaning “I’ll leave it up to you,” invites guests to surrender to the chef’s mastery as they’re guided through a tasting of meticulously selected, sustainable seafood. Each bite is a sensory experience—thoughtfully balanced in flavor, texture, and presentation.
Signature courses include Hamachi (yellowtail), Akami (lean bluefin tuna), Botan Ebi (spotted prawn), Ikura (salmon roe), Bincho (albacore), Maguro (chopped tuna), Hotate (scallop), Gindara (miso black cod), Toro (fatty tuna), Wagyuni (surf n’ turf), Sake (salmon), and Unagi (BBQ eel). The omakase experience is priced at $75 per guest and includes a round of sake.
For those seeking the pinnacle of indulgence, the Boū-gie upgrade features three additional market-fresh seasonal courses, enhancing the 12-course experience with even more variety.
Guests are welcome to arrive early or linger after their omakase to enjoy beer, wine, or sake on the patio or front lawn. A small selection of desserts is also available for those who’d like to end their experience on a sweet note in these relaxed, outdoor spaces.
