Father/son duo Chef Eric Miller and Adam Miller, who pride themselves on the dock-to-dish and farm-to-table movements, have made the East End dining scene even more delicious with the launch of Flagship. Diners can expect fresh daily catches and craft cocktails at the new Montauk eatery that will be open through November 2017.
Chef Eric, a veteran of the Hamptons and Montauk dining scene, will cook up crudos, a raw bar, and shareable small plates, as well as locally-sourced seafood, meat, and poultry entrees. There’s no better place to get fresh seafood! Highlights of the menu include torched fatty bass crudo, shrimp on sugar cane spear, lobster spring roll, and imperial aged burgers with smoked bacon, crisp shallots, fondue, and fried duck egg.
“We are committed to making Flagship an exemplar of everything that is fresh and local on the East End,” remarked Chef Eric, a long-time Long Island advocate of the region’s bounty. “I am also delighted to partner again with my son, Adam, who is taking the craft of the cocktail to new heights in Montauk.”
Adam is a long-time mixologist and will bring the craft cocktail scene to Montauk with his signature pre-bottle classic cocktails for large groups (Low ABV Bamboo, Martini, Negroni, Manhattan, and more) as well as drinks made with fresh ingredients to complement the food menu. One of Adam’s specialties is a frozen drink in a take out container-shaped glass called “Take Out.”

“We are bringing advanced cocktail culture to Montauk with top quality spirits, housemade syrups and cordials using the locally harvested ingredients,” shared Adam. “Our drinks marry elements of familiar cocktails, like the Margarita, Daiquiri, Kir Royale, Pisco Sour and Caipirinha, with my own twists that will surprise and delight our guests.”
Flagship’s wine list will feature bottles from Long Island and around the world, and one popular option for the summer is rosé on tap at $10 a glass.
Adam was trained at Pratt Institute and he designed Flagship with that knowledge. The style combines clean and simple industrial chic with a subtle tropical vibe. He is particularly proud of the restaurant’s wallpaper that he custom designed with an up-and-coming artist in Poland.
Flagship is open seven days a week from 5 p.m. to late.
