
Calissa in Water Mill is one of those spots you see all the time while driving on 27 and wonder about. The place runs like a jet engine. You arrive to complimentary valet parking, amazing front-of-house staff, and peer into an oasis of Greek fine dining. An open kitchen lets you watch the world of chef life unfold. The interior is sexy, with a long bar and house music always playing. Outside is an enormous dining area that’s lively and beautiful.

We sat down and started with the Saganaki, the world-famous fried Greek cheese. They do it right at Calissa — sesame seed, fresh honey, the dish is a flavor bomb. You can do steak here, and I recommend you do — it comes out cooked perfectly with fresh tomatoes.
If you’re into the Mediterranean diet, this is the spot for you.
We also tried the grilled octopus, which is listed as an appetizer but could easily stand in as your entrée if you’re looking to eat a little lighter that evening. The entire evening at Calissa’s is special, and if you’re up for it — and feel like dancing — after 10pm, the restaurant transforms into a late-night spot that makes for a real Hamptons memory. Highly recommend.
