Mecox Bay Dairy in Bridgehampton is no longer cheese-only. A dairy from 2003, they are now hoping to branch out into other dairy products. Their first mission? Ice cream mixes for domestic chefs.
“We have more cows to milk now than ever before,” said Peter Ludlow, one of the co-owners. “Ice cream was a good alternative.”
Ludlow and his business partner Shane Donoghue produce the cheeses at Mecox Bay and have started to experiment by using their spare milk for ice cream. They first started seriously discussing making ice cream mixes in March or April with the hopes of being able to sell their first batch by August.
“We already have the cheese process facility,” Ludlow said. “We already have the license to do that stuff.”
Ludlow and Donoghue have started playing around with vanilla and are attempting to master the ratio. “We found out the ice cream is not the same as milk sugar,” Ludlow joked.
So far, they have successfully figured out how to make chocolate ice cream. They have also been thinking about butter milk and there are rumors of chocolate-flavored bacon.
