“I am very excited to finally open my own restaurant,” noted Winston Lyons about Winston’s Bar and Grill. “The menu features all of my creations many with a special Caribbean flavor.”
Lyons, who has shared time in the kitchen at several East End favorites, including Bostwick’s, East Hampton Grill, East Hampton Point, and Turtle Crossing, is bringing a tasty Caribbean flair to the Hamptons with Winston’s Bar and Grill, which took over the former location of Nichol’s in East Hampton.

Open for breakfast, lunch and dinner year-round, the restaurant will offer several weekly specials, including Montauk night on Tuesdays featuring dishes created from Montauk-sourced ingredients and 2 for 1 Montauk drafts, Caribbean-style suppers on Sundays, and specials on Red Stripe beer and wings, featuring several styles including Asian and Caribbean on Thursdays.
Patrons can pair their island inspired meals with tropical themed cocktails like Winston’s Signature Coco Punch with Shelback spiced rum, Finlandia coconut, Chambord liqueur, pineapple juice and orange juice or the Mai Tai with Seven Tiki Spiced Fijian rum, Kraken, Cointreau and splash of orange juice and lime juice.

As for the executive chef’s favorite dish on the menu, he stuck with a Caribbean classic. “My Jerk Chicken, a traditional Jamaican dish, is best jerk chicken you will ever have,” shared Lyons.
