On Saturday, July 16th and Saturday, August 13th, Shuko, a Manhattan-based Japanese sushi bar, will join forces with Highway Restaurant & Bar in East Hampton. During these two days, Shuko will offer their well-known cuisine at one of the hottest spots in the Hamptons.
“We’re thrilled to return to Highway Restaurant & Bar this summer as this is where we previewed Shuko before opening in NYC two years ago. For the pop-up, we’ll be bringing to the Hamptons a taste of what we have now become in NYC,” says the Shuko team. “We’re excited to show our initial supporters and new diners what we have been up to since we’ve last been out east, and we can’t wait to work with our Highway family again as they too have evolved over the past several seasons.”
Chefs Nick Kim and Jimmy Lau are the driving force behind the Japanese sushi bar. They met in 2005 working at Masa in Columbus Circle. In 2012, Kim and Lau partnered on their first solo project, Neta, where they explored their modern interpretation of traditional sushi. In 2013, the chefs left Neta to focus on their own restaurant, Shuko, which is open full time in Union Square and now will shortly venture into familiar territory for summer 2016.
