@PopUpBagels, an exclusive bagel club that started in Fairfield County as a backyard pickup window, is popping up in the Hamptons this summer. The freshly baked creations, along with spectacular schmears, will be available to pick up during Friday drops beginning Memorial Day weekend.
We caught up with owner Adam Goldberg about the breakfast classic, expanding to the Hamptons, what makes @PopUpBagels standout, and more.
Why expand @PopUpBagels to the Hamptons?
AG: Many of our Greenwich, CT subscribers asked about it for their summer plans, so we figured… let’s do it! @PopUpBagels is about bringing people together over fresh baked bagels and delicious spreads. There are so many homes that regularly host visitors on the weekends in the Hamptons, that having our unique bagels and schmears at the ready felt like a perfect fit.
@PopUpBagels regularly sell out – with over 200 dozen bagels purchased every weekend. What makes the @PopUpBagels bagel standout?
AG: Our bagels have a unique texture and taste that differentiate them from all other bagels on the market. We also only sell our bagels by the dozen along with schmears on the side. No breakfast sandwiches or toasted bagels at our pickups.
Can you give us a sneak peek into what options will be available in the Hamptons this summer and where?
AG: We plan to offer our bagel packages weekly with Friday pickups. All of our bagel packages include fresh baked bagels, weekly changing schmears and artisan smoked fishes. Our bagels are available by advanced sale only, and will be on-sale at a specified time each week if not a subscriber.

Tell us about your subscription program – and when will it be available again?
AG: Subscribers never have to worry about being sold out of @PopUpBagels for the upcoming weekend. We have a fresh dozen and chosen spreads available for pickup each week at the same time. Fish orders can be chosen weekly to accompany the spread. We plan to launch subscription in the Hamptons the first week of June. Currently our Fairfield County subscription base is over 300 families with a 100 plus family waiting list.
What are your favorite bagel flavors and accompaniments?
AG: I’m a huge fan of our Salted Poppy bagel along with some roasted shallot butter. One of our fan favorites is our Maldon Bagel.
How do you come up with new varieties and schmears?
AG: We often get ideas from our 5,000 plus fans on Instagram and also work with what’s seasonal when available to make the freshest schmears around. Some flavors have included Dill Pickle Cream Cheese, Ramp Cream Cheese, Capers and Red Onion Cream Cheese.
Is there anything else you would like to add?
AG: We’re super excited to be sharing our bagels and schmears out east this summer.
