Eating Thanksgiving leftovers can be monotonous when you keep making the same uncreative turkey sandwich. Chef Sam Talbot’s Turkey Paillards with Cranberry Piccata Sauce (makes 4 servings) utilizes not only your leftover turkey, but many of the traditional Thanksgiving seasonings. The dish tastes delicious with Thorny Rose Red Blend.
Cranberry Piccata Sauce:
Directions:
1. Preheat the oven to 450 degrees.
2. Spread the fennel on a baking sheet, drizzle with 1 tablespoon of the olive oil and bake until browned on the edges, about 6 minutes.
3. Set aside to cool to room temperature.
4. In a large skillet, heat the remaining 2 tablespoons of olive oil over medium-high heat.
5. Add the onions, celery, and fennel seeds and cook until the onions and celery are translucent, about 2 minutes.
6. Add the white wine and cook for 2 minutes, stirring with a wooden spoon to scrape up any browned bits from the bottom of the pan to deglaze it.
7. Add the toasted fennel, cranberries, parsley, capers, sweetener, pink pepper, and butter and cook for 2 to 3 minutes to heat through.
8. Remove the pan from the heat.
Turkey Paillard:
Directions
1. In a shallow bowl, whisk together the milk and eggs to make an egg wash.
2. In another shallow bowl, combine the panko, flour, and Parmesan.
3. Dip each piece of turkey in the egg wash, coating both sides, then dip into the breading mixture.
4. Shake off any excess breading.
5. In a large skillet, heat the canola oil over medium-high heat.
6. Add the turkey and pan-fry until golden brown, 2 to 3 minutes on each side.
7. Serve each paillard topped with 1/4 cup of the cranberry piccata sauce.
