Eight Refreshing Cocktails To Celebrate The Beginning Of Spring In The Hamptons

Spring beings on Wednesday, March 20th and after the awful winter weather the Hamptons had this calls for some celebrating.

1. Lusty Cucumber Refresher: A grown up version of the childhood favorite lemonade with a refreshing surprise.

  • 1 1/2 Parts Pucker Lemonade Lust Vodka
  • 1 Part Fresh Lemon Juice
  • 1/2 Part Simple Syrup
  • 3 Large Cucumbers
  • 2 Parts Tonic Water
  • Pimm’s

    Directions: Add cucumbers and simple syrup to a cocktail shaker and muddle. Add vodka, lemon juice and ice to the cocktail shaker. Shake then strain. Pour into a Collins glass. Top with 2 parts tonic water and a bar-spoon floater of Pimm’s.

    2. Briar Patch: Beer infused cocktails are all the rage this spring, test it out with this tasty combination.

  • 1 oz. Cointreau
  • .5 oz. Fresh Lemon Juice
  • 3 Raspberries
  • 4-5 oz. Raspberry Lambic Beer

    Directions: Add Cointreau, lemon juice, raspberries and ice to a mixing glass. Shake and fine-strain over ice in a highball glass. Top with beer and garnish with a pick of raspberries.

    3. Royal Blueberry Cooler: This refreshingly sweet cocktail is the perfect way to celebrate spring.

  • 1 1/2 Parts Portón
  • 1/2 Part St. Germain
  • 1/2 Part Fresh Lemon Juice
  • Handful of Blueberries

    Directions: Combine all ingredients and serve over ice in a rocks glass and garish with blueberries.

    4. LeSUTRA Strawberry Margarita: The strawberry liquor in this margarita adds the perfect combination of sweet to the typically sour drink.

  • 2 oz. Strawberry LeSUTRA Sparkling Liqueur
  • 1 oz. Tequila

    Directions: Blend Strawberry LeSUTRA Sparkling Liqueur with Tequila. Serve in a chilled margarita glass. If desired salt the rim.

    5. Atlantico Spring Fling: Start your spring by sipping on this delicious citrus easy to make cocktail with some fizz.

  • 1.25 oz. Atlantico Platino Rum
  • .25 oz. Fresh Squeezed Lime Juice
  • .25 oz. Orange Liqueur
  • 1 Dash Bitters
  • Splash of Ginger Ale

    Directions: Combine all ingredients and serve over ice in highball glass. Garnish with lime and orange.

    6. The Best Bellini Ever: While a trip to Harry’s Bar in Venice make not be in your immediate future, The Cocktail Guru Jonathan Pogash has created the next best option.

  • 1 oz. Van Gogh Cool Peach Vodka
  • 1/4 Ripe Peach
  • 1 tsp. Agave Nectar
  • .5 oz. Fresh Lemon Juice
  • 3 oz. Prosecco

    Directions: In a mixing glass, muddle the peach, agave, and lemon juice. Add the Prosecco with ice and gently fold the ingredients (without stirring too much, as this will remove bubbles). Strain into a chilled champagne flute. Top off with extra Prosecco. Garnish with a fresh peach slice. (If peaches are not in season substitute the ripe peach, agave, and lemon juice for 1.5 oz. of store-bought “Peach Nectar”.)

    7. Basil Hayden’s Spring Forward Julep: Mixologist Joy Perrine added a delicious twist to the traditional cocktail with muddled strawberries.

  • 4 Parts Basil Hayden’s Bourbon
  • 4 Chopped Strawberries
  • 10 Kentucky Colonel or Spearmint Leaves
  • 4 Lemon Wedges
  • 1 Part Water
  • 2 Tbsp. Brown Sugar

    Directions: Muddle brown sugar and water in pint glass until sugar dissolves. Add chopped strawberries, lemon wedges and mint leaves and muddle well. Add Basil Hayden’s and shake. Add ice and shake once again. Strain cocktail over crushed ice and garnish with a mint sprig and strawberry.

    8. Skinny Mojito: If you are worried about fitting into your bikini this summer, sip on this low calorie cocktail.

  • 2 oz. TY KU Citrus Liqueur
  • Fresh Mint
  • Squeeze of Lemon, Lime or Orange
  • Splash of Diet Citrus Soda

    Directions: Combine all ingredients and serve over ice. Garnish with a lime wedge.

    • Cook With Simply Creative Chef Rob Scott

Simply Creative Chef Rob Scott has been the head chef at many restaurants in the Hamptons since 1980 and has previously worked as a private chef on the North Fork. Chef Rob now teaches cooking and baking classes at more than 95 libraries across Long Island, holding events for children, teens, and adults. Some of his classes are hands-on while others are demonstrations with samples to be enjoyed by those in attendance.

All I can say is wow. JUST WOW!

The 1770 House is the real deal. It’s some of the best fine dining that the Hamptons has to offer. Executive Chef Michael Rozzi has put together a menu that is hard to beat and the restaurant is run by long-time manager, Carol Covell. I want to get to the food because that’s the real star of the show, but the people that work here are also.  @1770house

Before there was easily accessible internet and various movie streaming networks, there was always the East Hampton Library – that beautiful historic building located on the corner of the beginning of Route 114 and intersecting Route 27. My first year as an east-end writer I actually composed all of my articles in the basement of that library. They had primitive internet access computers there.
